Ingredients
  

  • 2 Turkey Thighs Granny’s
  • 1 tbsp olive oil
  • ½ cup red onion sliced
  • 1 cup red bell pepper coarsely chopped
  • 2 cups baby potatoes sliced into ¼” rounds
  • 1 cup zucchini sliced into ½’ rounds
  • 1 cup cremini mushrooms cut in half
  • 1 tbsp garlic chopped
  • ¼ tsp freshly cracked black pepper  
  • 1 tsp sea salt
  • 1 tsp fresh oregano coarsely chopped
  • 1 tsp fresh thyme coarsely chopped
  • 1 tsp Italian parsley coarsely chopped

Instructions
 

  • Preheat barbecue to high heat (400°F | 200°C).
  • Remove skin & bone from turkey and cut into bite sized pieces.
  • Combine all ingredients except for fresh herbs in a bowl and mix well.
  • Place one 18-inch piece of heavy-duty foil on the counter top and transfer mixture to foil.
  • Fold foil into pack to prepare for the barbecue. Double wrap the foil pack with another layer of foil.
  • Place foil pack on the grill over indirect heat and for 30 minutes.
  • Toss with fresh herbs before serving hot.
