Garlic Bread-Stuffed Meatballs

- 1 bulb garlic peeled
- ¼ cup butter
- 1 slice bread torn
- 1 tbsp parsley chopped
- 2 tbsp Parmigiano-Reggiano cheese grated
- ½ whole lemon zested and juiced
- 1 lb ground turkey
- 1 tbsp kosher salt
- 1 tbsp black pepper
- 1 splash Worcestershire sauce
- 1 splash hot sauce
- 1 can crushed tomatoes
- 4 slices provolone
- 1 tbsp micro basil chopped
Confit garlic in butter until soft, for approximately 15 minutes.
Toss garlic confit into a bowl with bread, parsley, parmigiana cheese and lemon. Roll out mixture into 4 balls and set aside.
Season turkey with salt, pepper, Worcestershire sauce and hot sauce. Wrap around garlic bread balls and poach in seasoned tomatoes for 25-35 minutes.
Remove and plate in a large bowl.
Cover with sauce and a slice of provolone.
Melt cheese with a torch and garnish with micro basil.
