Turkey Chili Blanco

Ingredients
  

  • 4 cups turkey meat
  • 3 cups onion
  • 1 jalapeño 4.5 inches
  • 3 tbsp olive oil
  • 4 cups turkey stock
  • 2 cans white beans 540 mL each
  • 1 tbsp lime juice
  • 1 tbsp cumin
  • 1 tsp oregano
  • 1 tsp freshly cracked black pepper  
  • ½ tsp ground chili
  • 1 cup corn cobs rinsed and drained
  • cup fresh cilantro
  • 4 cloves garlic

Topping (optional)

  • 1 avocado
  • shredded cheese
  • tortilla chips
  • lime

Instructions
 

  • Cut 4 cups of turkey breast into small pieces. Set aside.
  • Finely chop onions and jalapeno and cook for 7 minutes in a hot pan with olive oil.
  • Add chopped garlic and cook for 1 minute.
  • Add broth, turkey, rinsed and drained white beans, spices, pepper, lime juice and corn.
  • Bring to a boil.
  • Reduce heat and simmer for 7 to 10 minutes.
  • Add cilantro and cook for one minute.
  • Add garnish to taste.
