Whole Grain Spaghetti with Turkey, Carrots and Spinach

Ingredients
  

  • 13 oz whole grain spaghetti
  • 1 tsp cooking oil
  • 1 onion chopped
  • 1 lb ground turkey
  • 2 cups carrots grated
  • salt and pepper to taste
  • 4 cups baby spinach
  • 2 tbsp parsley chopped
  • ½ cup Grana Padano cheese grated

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Cook the pasta al dente, following the cooking instructions on the package. When the pasta is cooked, reserve ¼ of the cooking water, then drain.
  • In the same pot, heat a drizzle of the cooking oil at medium high heat and caramelize the onion.
  • Add the turkey and the carrots and cook until the turkey is well cooked.
  • Add salt and pepper, to taste.
  • Add pasta, spinach and cooking water and gently toss with tongs; wait until the spinach is well cooked.
  • Remove the pot from heat.
  • Add chopped parsley and cheese, and gently toss.
