Turkey Stuffed Peppers

Ingredients
  

  • 1 lb ground turkey
  • 2 tbsp olive oil
  • 2 cups white rice cooked
  • 1 can black beans rinsed
  • 1 ½ cups shredded cheese
  • 2 tbsp taco seasoning
  • 2 tsp garlic powder
  • 1 tsp chili powder
  • ½ medium white onion
  • 6 medium bell peppers
  • 1 cup salsa

Instructions
 

  • Heat a large pot over medium heat with 1 tbsp of olive oil. Chop white onion and cook in a pot on medium heat until the onion softens.
  • Add your ground turkey and begin cooking together.
  • Once the turkey is cooked you can add in spices, salsa and black beans to continue cooking. Stir together until combined.
  • Lastly add in your cooked rice and 1 1/2 cup of shredded marble cheese. Give a good stir until the cheese has melted.
  • Cut the top off of the pepper and empty the seeds inside.
  • Then carve out a pumpkin face from your bell peppers.
  • Fill the bell pepper with the turkey mixture and bake at 350 for 10 minutes covered in foil. Remove the foil and top the peppers with the remaining 1/2 cup cheese divided on each pepper.
  • Bake for another 15 and serve.
