Heat a large pot over medium heat with 1 tbsp of olive oil. Chop white onion and cook in a pot on medium heat until the onion softens.
Add your ground turkey and begin cooking together.
Once the turkey is cooked you can add in spices, salsa and black beans to continue cooking. Stir together until combined.
Lastly add in your cooked rice and 1 1/2 cup of shredded marble cheese. Give a good stir until the cheese has melted.
Cut the top off of the pepper and empty the seeds inside.
Then carve out a pumpkin face from your bell peppers.
Fill the bell pepper with the turkey mixture and bake at 350 for 10 minutes covered in foil. Remove the foil and top the peppers with the remaining 1/2 cup cheese divided on each pepper.
