Turkey Sausage Shakshouka

Ingredients
  

  • ¼ cup olive oil
  • 2 onions
  • 1 tbsp tomato paste
  • 1 lb turkey sausage
  • 2 bell pepper
  • 1 jalapeños optional
  • 4 large tomatoes
  • 3 potatoes
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp caraway
  • ½ tsp cilantro powder
  • 1 tsp harissa
  • 4 eggs
  • 1 cup water
  • fresh parsley chopped, for garnish

Instructions
 

  • Pour olive oil in a cooking pot and bring to medium heat.
  • Add onions, roughly cut. Once softened, add tomato paste and mix.
  • Gradually incorporate sausages cut in sections, bell peppers and jalapenos (seeded and cut), tomatoes (cut in cubes) and potatoes (cut in small wedges).
  • Mix well and add salt, black pepper, cumin powder, cilantro powder and harissa.
  • Pour one cup of water, cover and cook for about 25 minutes.
  • Break 4 eggs spaced apart, cover and let simmer for another 4 to 5 minutes.
  • Remove from heat, transfer in a large plate, garnish with fresh parsley, and serve with bread.
