1 ½lbskinless turkey breastor thighs, cut into bite-sized cubes
3cuppineapplecut to match turkey size
½largered onioncut into 1¼-inch pieces
wooden skewerssoaked in water for 30 minutes
2tbspsafflower oilor canola oil
salt to taste
For the shawarma-style spice rub
1tbspground cumin
1tbspground coriander
½tbspground tumeric
1tspground allspice
1tspsmoked paprika
½tspground cinnamon
2tspsalt
Instructions
Add the turkey to a bowl and drizzle with oil. Sprinkle in the full spice rub and mix thoroughly until every piece is well coated. Cover and let marinate for at least 30 minutes (or up to 2 hours) in the fridge.
Assemble your skewers by alternating turkey, pineapple, and red onion. Repeat until all ingredients are used.
Preheat your barbecue to medium-high heat and allow it to come to temperature for 10 minutes. Lightly oil the skewers before grilling.
Grill the skewers, turning occasionally, until the turkey is nicely charred on the outside and reaches an internal temperature of 74°C (165°F). Remove from grill and rest, covered with foil, for 5–10 minutes before serving.

These skewers are perfect with flatbread, a cooling yogurt sauce, or a simple salad for a fresh and satisfying summer meal.
