Turkey Pineapple Skewers

Ingredients
  

For the Skewers

  • 1 ½ lb skinless turkey breast or thighs, cut into bite-sized cubes
  • 3 cup pineapple cut to match turkey size
  • ½ large red onion cut into 1¼-inch pieces
  • wooden skewers soaked in water for 30 minutes
  • 2 tbsp safflower oil or canola oil
  • salt to taste

For the shawarma-style spice rub

  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • ½ tbsp ground tumeric
  • 1 tsp ground allspice
  • 1 tsp smoked paprika
  • ½ tsp ground cinnamon
  • 2 tsp salt

Instructions
 

  • Add the turkey to a bowl and drizzle with oil. Sprinkle in the full spice rub and mix thoroughly until every piece is well coated. Cover and let marinate for at least 30 minutes (or up to 2 hours) in the fridge.
  • Assemble your skewers by alternating turkey, pineapple, and red onion. Repeat until all ingredients are used.
  • Preheat your barbecue to medium-high heat and allow it to come to temperature for 10 minutes. Lightly oil the skewers before grilling.
  • Grill the skewers, turning occasionally, until the turkey is nicely charred on the outside and reaches an internal temperature of 74°C (165°F). Remove from grill and rest, covered with foil, for 5–10 minutes before serving.

Notes

These skewers are perfect with flatbread, a cooling yogurt sauce, or a simple salad for a fresh and satisfying summer meal.
