Turkey & Butternut Squash Stew

Ingredients
  

  • 11/2 cup turkey cooked leftovers
  • 2 cups chicken stock
  • ¼ white onion minced
  • 2 tsp garlic crushed
  • 1 cup peppers diced
  • 2 ears corn or canned corn
  • 1 cup butternut squash diced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • salt and pepper to taste
  • 1 ½ tsp olive oil

Instructions
 

  • In a medium saucepan, sauté olive oil, onions, garlic, and fresh herbs over medium heat.
  • Add cubed butternut squash and sauté until squash is softened, but not fully cooked.
  • Add leftover turkey and stock/broth of your choice
  • Reduce heat and simmer
  • Add peppers and corn
  • Season with salt + pepper and serve!
