Turkey and Beans Cacio E Pepe

Ingredients
  

  • 1 turkey thigh with bone and skin, cut in 2 in center
  • 1 clove garlic grated
  • lemon juice of ½ lemon
  • 1 can white beans 454 g, drained and rinsed
  • 2 cups baby spinach
  • 2 tbsp freshly cracked black pepper  
  • ¾ cup parmesan cheese grated, substitute pecorino
  • ¾ cup cherry tomatoes
  • 3 tbsp olive oil

Instructions
 

  • Preheat oven at 400℉.
  • Mix the garlic with 1 tablespoon oil and half of the lemon juice. Place the turkey on a pan covered with parchment paper.
  • Add the oil with salt and pepper to taste. Bake 30-35 minutes.
  • Heat 2 tbsp oil in a skillet over medium high heat.
  • Cook the beans 3-4 minutes.
  • Add the pepper, 3/4 parmesan cheese, a drizzle of extra oil to taste, the spinach and the remaining lemon juice. Cook 2 minutes.
  • Serve beans with turkey and cherry tomatoes.
