Turkey and Beans Cacio E Pepe

- 1 turkey thigh with bone and skin, cut in 2 in center
- 1 clove garlic grated
- lemon juice of ½ lemon
- 1 can white beans 454 g, drained and rinsed
- 2 cups baby spinach
- 2 tbsp freshly cracked black pepper
- ¾ cup parmesan cheese grated, substitute pecorino
- ¾ cup cherry tomatoes
- 3 tbsp olive oil
Preheat oven at 400℉.
Mix the garlic with 1 tablespoon oil and half of the lemon juice. Place the turkey on a pan covered with parchment paper.
Add the oil with salt and pepper to taste. Bake 30-35 minutes.
Heat 2 tbsp oil in a skillet over medium high heat.
Cook the beans 3-4 minutes.
Add the pepper, 3/4 parmesan cheese, a drizzle of extra oil to taste, the spinach and the remaining lemon juice. Cook 2 minutes.
Serve beans with turkey and cherry tomatoes.
