Leftover Turkey Fried Rice

Ingredients
  

  • 3 tbsp canola oil
  • 2 cups brown rice cooked and cooled
  • 1 whole carrot diced
  • 1 bunch scallions sliced
  • 1 red bell pepper diced
  • ½ cup peas
  • 2 cups turkey roast leftover Butterball Boneless, chopped
  • 2 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 2 tsp sriracha hot sauce
  • 2 eggs scrambled

Garnish

  • ¼ bunch cilantro finely chopped
  • 1 limes for squeezing

Instructions
 

  • In a large skillet, heat the oil over medium high. When hot, add the rice and cook for 2-3 minutes until the edges are golden brown.
  • Add the carrot, scallions, peppers, peas, and turkey. Cook for another 2-3 minutes, mixing periodically.
  • Add the soy sauce, hosin, and sriracha and mix to incorporate.
  • Add the eggs and cook for a minute or two, allowing them to scramble and incorporate into your fried rice.
  • Garnish with fresh cilantro, extra hot sauce, and some limes for squeezing!
