Hoisin and Peanut Turkey Meatballs

Ingredients
  

Turkey Meatballs

  • 1 package Granny's Lean Ground Turkey
  • ¼ cup yellow onion chopped
  • 2 tbsp garlic minced
  • 1 tsp gingerroot grated
  • 1 medium egg beaten
  • cup peanuts crushed
  • salt and pepper to taste
  • jasmine rice to serve
  • green onions to serve, chopped
  • peanuts to serve, crushed

Peanut Hoisin Sauce

  • 1 tbsp sesame oil
  • ½ cup hoisin sauce
  • ½ cup smooth peanut butter
  • 2 tbsp water
  • 1 tbsp chili garlic sauce optional

Instructions
 

Turkey Meatballs

  • Preheat the oven to 350°F (177°C). In a medium mixing bowl, mix turkey, yellow onion, garlic, ginger, egg crushed peanuts and salt and pepper.
  • Roll turkey mixture into meatballs, roundly 1 - 1 1/2-inch meatballs. Place on a lined baking sheet.
  • Bake meatballs for 20 minutes or until internal temperature reaches 165°F with a meat thermometer.
  • Place cooked meatballs on a bed of rice and spoon peanut hoisin sauce over.
  • Top with extra crushed peanuts and chopped green onions.

Peanut Hoisin Sauce

  • Heat a small saucepan over medium heat.
  • Mix sesame oil, hoisin sauce, smooth peanut butter, water and optional garlic chili sauce.
  • Heat and stir until peanut butter has melted and is mixed throughout.
