Ground Turkey & Bok Choy Stir Fry

Ingredients
  

Stir Fry

  • 1 lb lean ground turkey
  • ¼ cup soy sauce
  • 2 tsp rice vinegar
  • 2 tsp Shaoxing cooking wine chinese cooking wine
  • ½ tsp honey
  • 3 cloves garlic
  • 1 tsp chili garlic sauce optional
  • ¼ cup turkey stock
  • 1 tsp cornstarch
  • 5 cups bok choy chopped (baby bok choy works well, too!)
  • 1 cup green bell pepper diced

To Serve

  • ¼ cup green onions chopped
  • ¼ cup peanuts chopped
  • cooked brown rice

Instructions
 

  • In a large skillet, brown turkey over medium heat.
  • Combine soya sauce, rice vinegar, Shaoxing wine, honey, garlic, chili garlic sauce, turkey broth and cornstarch in a bowl. Mix well.
  • Increase heat to medium high and add bok choy and green bell pepper until bright green and crisp - about 3 minutes.
  • Add sauce and stir to further cook turkey and veggies. Bring to a simmer for 1 minute, mixing constantly.
  • Remove from heat and serve over a bed of fresh brown rice and top with freshly cut green onions and chopped peanuts.
