Fried rice with turkey and vegetables

Ingredients
  

  • 2 tbsp olive oil
  • 1 tbsp sesame oil toasted
  • 1 lb ground turkey
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 green onions chopped, white separated from green
  • ½ cup carrots small cubes
  • ½ cup celery small cubes
  • ½ cup edamame frozen
  • 1 red bell pepper diced
  • ¼ cup hoisin sauce
  • 1 tbsp rice vinegar
  • 2 cups brown rice cooked and cooled
  • 1 cup napa cabbage chopped
  • lime wedges optional

Instructions
 

  • In a large skillet, heat oil over medium-high heat and add the turkey. Cook for 4 minutes, stirring occasionally.
  • Add the garlic, ginger and the white part of the green onions. Stir and cook for 1 minute.
  • Add carrots, celery, edamame and peppers. Mix and cook for 5 minutes.
  • Add the hoisin sauce, rice vinegar, cooked rice and cabbage. Cook and stir for 1 minute or until all ingredients are hot.
  • Garnish with the green part of the green onions. If desired, add a wedge of lime before serving.
