Duchess Sweet Potatoes with Gouda

Ingredients
  

  • 3 lb sweet potato steamed until very soft and mashed
  • 3 egg yolks
  • ½ cup whipping cream
  • 1 cup gouda cheese grated
  • 1 tsp salt
  • 1 tsp freshly cracked black pepper  
  • ½ tsp nutmeg

Instructions
 

  • In a mixing bowl, combine the mashed sweet potatoes, yolks, cream, gouda, salt, pepper, and nutmeg.  Whisk well to combine until very smooth.  Transfer to a piping bag fitted with a large tip.
  • Pipe the duchess sweet potato mixture into your baking dish artfully.
  • Bake at 375 degrees for 25-30 minutes.
  • Remove and garnish with fresh chives.
