Preheat oven to 375°F (190°C). Cut turkey breast into fillets. In a bowl, mix flour and salt. Mix panko crumbs with olive oil, parmesan and paprika in a separate bowl. Place eggs in a third bowl.
Dredge one turkey fillet at a time in flour mixture, then dip in egg, and roll them in the panko mixture until they are well coated.
Place breaded turkey fillets flat on a baking sheet and bake for 10 minutes. Flip each fillet and continue to cook for 10 minutes.
Generously cover each fillet in marinara and place a slice of cheese on top. A meat thermometer will read 170°F (77°C) when the turkey is fully cooked. Serve fillets on toasted garlic buns with extra sauce, if desired.
