  1. Heat a drizzle of oil in a pan over medium high heat.
  2. Add salt and pepper to both sides of the turkey. Cook the turkey breast for 5 minutes.
  3. Flip the turkey breast, cover and cook over low heat for 20 minutes until cooked through.
  4. Remove from the pan and let sit for about 5-8 minutes before slicing.
  5. Turn up the heat to high. Add the poultry stock concentrate to the water and deglaze the pan with it.
  6. Scrape up the bits at the bottom of the pan and cook for about 2-3 minutes.
  7. This is your jus to dip the sandwich.
  8. Mix the cabbage with the carrot, parsley, oil, rice vinegar and sugar. Add salt and pepper to taste.
  9. Toast the baguette to your liking.
  10. Garnish with the sliced smoked turkey breast, the fresh turkey breast and a slice of cheese.
  11. Serve with the coleslaw and the dipping jus.
