  1. Brush butter on both sides of the 8 slices of bread. Set aside.
  2. Season turkey with a dash of salt and pepper. Set aside.
  3. In a skillet, heat a drizzle of oil at medium-high heat, add turkey and cook on both sides for 2 minutes or until turkey is fully cooked. Transfer in a bowl and set aside.
  4. In the same skillet, add a drizzle of oil and cook onion and sweet pepper for 5 minutes, stirring frequently, until caramelized, then transfer in the turkey bowl.
  5. Add spinach to turkey and vegetables, mix well and set aside.
  6. In the same skillet heated at medium-high, put 2 slices of bread and let brown about 1 minute, then turn and put ¼ of the cheese, ¼ of the turkey mix, some vegetables and pesto on one of the slices. Cover with the other slice of bread.
  7. Using a spatula, slightly flatten grilled cheese, turn and cook for another 20 seconds. Remove from skillet and keep warm.
  8. Repeat the same process with the 3 remaining grilled cheeses.
  9. Cut grilled cheeses in two (see picture).
