Serves : 6
  1. Whisk together vinegar, orange zest, Dijon mustard and honey.
  2. Drizzle in 1/2 cup (125 mL) sunflower oil gradually. Add salt and pepper to taste. Add onion and apricots.
  3. Let dressing sit at room temperature for about one hour.
  4. In a large bowl, mix turkey, celery, cabbage and raisins with one-third of the dressing.
  5. Chill for several hours or overnight. Serve on top of salad greens of choice. Add sprouts if desired. Serve balance of dressing on the side.
