In a shallow bowl, combine salt, pepper and flour. In another bowl, whisk eggs. In a third bowl, combine breadcrumbs, garlic powder, chili flakes and parsley. Dredge one cutlet in flour, dip in egg, then in breadcrumbs, coating well. Repeat with remaining cutlets.
In a large skillet, heat oil over medium-high and saute cutlets until golden, about 3 minutes on each side. Transfer cutlets to a baking sheet lined with foil. Drizzle each cutlet with honey and bake at 350ºF (180ºC) for 15 minutes or until cutlets are cooked through and honey begins to caramelize.
