Cook Time : 2 hrs
  1. Preheat oven to 425°F.
  2. Dry turkey breast with paper towels.
  3. In a small bowl, mix together the butter, 1 Tbsp. of each herb chopped, garlic, salt and pepper.
  4. Carefully loosen the skin away from the turkey breast to create a large pocket.
  5. Spread the butter onto the breast and then on the bottom of the breast and on top of the skin.
  6. Tie three times with kitchen twine to secure.
  7. Place in a roaster or appropriate baking pan.
  8. Place in the oven and reduce temperature to 350°F. Cook for 1 1/2 to 2 hours until thermometer reaches 165°F. Remove from oven.
  9. Tent with foil and let rest for 10 min. Slice and serve.
