This recipe is also fantastic in a sandwich or wrap.
  1. Season turkey breast with salt and pepper.
  2. Roast at 350F until cooked through to 170F, approximately 45 minutes.  Cool.  Dice turkey into 5 mm cubes.
  3. Chop all remaining ingredients and toss together.
  4. Add lime juice to mayonnaise and mix in cilantro and curry powder.  Add to the rest of the chopped ingredients and mix well.
  5. Taste and season with salt and pepper.  Add hot sauce, if desired.
  6. Spoon mix onto crackers or bread for party-style canapes and garnish with a small dollop of sour cream.
