In a large, deep skillet or Dutch oven, place turkey breast inside and add spices and herbs. Pour in water to cover. Bring to a boil, reduce heat and simmer for about 25-30 minutes until a digital meat thermometer inserted into the meat, away from the bone, reads 165oF (74oC).
Remove from heat, place on cutting board and let cool until able to touch.
Using your fingers, shred meat into bite-sized pieces. Place in large bowl.
Add in the diced apple, celery, walnuts, and red onion.
In a small bowl, whisk together the dressing ingredients. Pour over turkey mixture and stir well. Season with salt and pepper.
Refrigerate for one hour, then proceed to assemble sandwiches on sliced focaccia, spreading turkey on bottom and topping with fresh greens.
