1 cup (250 mL) all purpose flour for rolling dough
1 cup (250 mL) pizza sauce
1/2 cup (125 mL) fresh basil leaves
1/4 cup (60 mL) Mozzarella cheese, shredded
1 lb (500 g) cooked turkey thighs, or leftovers
1 small red onion, thinly sliced
1/2 cup (125 mL) mushrooms, thinly sliced
1/4 cup (60 mL) pitted black olives, sliced
2 Tbsp (30 mL) coarse salt
2 Tbsp (30 mL) dried oregano
Directions
Pre-heat oven to 400ºF (205ºC).
Coat a baking pan with 2 Tbsp (30 mL) olive oil and sprinkle with cornmeal. Set aside.
Divide pizza dough into four equal pieces. Roll each piece out into a circle approximately 10 inches (25 cm) in diameter. Spread 4 Tbsp (60 mL) of sauce over one half of each circle leaving a half-inch edge so that you can seal you pocket when you are done. Layer the remaining ingredients over pizza sauce, dividing the ingredients equally between the four circles. Carefully fold the bare side of the dough over the ingredients forming a pocket and firmly press the edges to seal.
Lightly brush each calzone with olive oil and sprinkle with coarse salt and oregano. Place each calzone on the baking sheet and bake for 25 - 30 minutes or until dough is cooked and golden.
Serve with extra pizza sauce for dipping, and add a side salad for a great meal.
