540 ml can diced stewed tomatoes with peppers and onions
½ cup white navy beans
1 tsp dried oregano
¼ tsp chili flakes (optional)
½ tsp sea salt
¼ tsp black pepper
2 cups baby spinach
2 Tbsp shaved parmesan cheese
2 slices baguette for serving (optional)
This would make a delicious and filling breakfast dish! Crack your eggs right into the tomatoes after the spinach is cooked and cover. Simmer until the yolks are cooked to your liking.
Directions
Heat a medium size frying pan on medium-high and evenly coat the pan with olive oil. While the pan is pre-heating, slice the turkey kielbasa into evenly sized rounds. Place kielbasa rounds into the pan and sear on each side for 4-5 minutes, or until golden brown.
Once the kielbasa is finished, turn the heat down to medium low and add the tomatoes, navy beans, oregano, chili flakes, sea salt and pepper. Stir well to combine. Let simmer for 10 minutes.
Add the spinach to the skillet and stir well until just wilted. Remove from the heat and top with shaved parmesan. Serve with baguette on the side for dipping!
