Serves: 4-6
*This produces a medium-spiced chili. For a milder option, add only 1 chipotle. For a hotter option, add 3 or more.
  1. Place all ingredients in a slow cooker.
  2. Cook on low for 6 hours or on high for 4 hours.
  3. Season with salt and pepper. Serve with any of the listed accompaniments.
 Optional accompaniments: lime wedges, sliced green onions, sour cream, shredded cheddar cheese, avocado or guacamole, cilantro, cornbread, nacho chips.
