Serves: 12-15
  1. Preheat oven to 375oF (190oC).
  2. In a small bowl, mix the turkey meat with the Sriracha, honey and melted butter.
  3. In another bowl, whisk the 6 eggs and milk until combined. Pour the egg mixture into a lightly oiled mini-muffin tin, filling each section three-quarters full. There may be extra egg mixture, save it for scrambled eggs or make a second batch of quichettes.
  4. Divide the turkey mixture evenly among the muffin tins.
  5. Top with 2 Tbsp (30 mL) of the blue cheese and all the scallions.
  6. Sprinkle with salt and pepper and pop in the oven for 20-25 minutes or until golden brown. They shouldn't jiggle if you shake the pan.
  7. Remove from the oven and top with the remaining blue cheese and a few sprinkles of scallions.
  8. Let cool and enjoy!
