TIP: As an alternative, place cutlets in oiled pan and bake at 375° F (190° C) for 25 minutes, just until turkey is no longer pink in centre. You can also substitute low-fat yogurt for mayonnaise to further reduce fat.
  1. Pound turkey to 1/4" (0.5 cm) thickness.
  2. In a shallow dish, combine bread crumbs, Parmesan cheese, thyme, tarragon and salt and pepper to taste.
  3. Brush both sides of cutlets with mayonnaise, then coat with crumb mixture.
  4. Cook cutlets in a frypan with 1 tbsp (15 mL) vegetable oil for 4 - 5 minutes on each side over medium-high heat.
